Mexican Lasagna
Mexican Lasagna
Brown on Stove Top:
-1lb ground beef
-1 c. black beans
-1 green pepper, chopped
-1/2 onion, chopped
Add and Simmer:
-Frozen Corn
-Salsa
Layer in a 9 x 12 pan:
-Beef mixture
-Tortillas
-Sour Cream
-Beef mixture
-Shredded Cheese
-Tortillas
-Sour Cream
-Beef Mixture
Bake:
-Cover with foil and bake for 25 minutes at 375.
-After 25 minutes, uncover, top with shredded cheese, and bake an additional 5 minutes, until cheese is melted.
Finishing Touches:
-Top with shredded lettuce and salsa.
-Serve with chips and guacamole!

ReplyDeleteI usually try to buy the whole wheat tortillas. But often, I'll pick up whatever is on sale! :)
