This will satisfy your craving for potato chips, I promise! And now they are carrying a LARGE bag of organic baby kale at Costco - yippee!
Ingredients:
Baby kale
Olive oil spray
Salt
1. Preheat oven to 350
2. Spread kale on a parchment lined cookie sheet
3. Spray lightly with olive oil and sprinkle lightly with salt.
4. Bake for 5-7 minutes. Watch them carefully, they can burn quickly!!
I made Kale Chips when I had my CSA last year and kept on getting Kale... I didn't know what to do with all this kale- why not bake it up? Go chips go!

Omg! I've been making these a lot lately with olive oil, sea salt and cayenne! Fun to come across this as I've recently been introduced to kale by Anne Leonhart:)
